The Waldhaus is The Fairmont Banff Springs' 'House in the Forest'. The Bavarian Cottage-style building was established in 1927 which was once used as the Banff Springs Clubhouse and is set on the edge of the Golf Course and the Spray River. The menu consists of authentic German and Swiss dishes such as venison baden-baden, Bavarian sampler plate, organic mache & watercress salad, organic beet salad, goulash soup, yellow split pea soup, swiss cheese fondue, truffle fondue, beef fondue, wiener schnitzel, pan seared duck breast, beer braised lamb shank, pan fried rainbow trout filets, porcini mushroom ravioli, chocolate fondue, mini black forest cake and warm apple strudel.
